Picked ripe by the Daye Bensa growers and the smallholders around them, washed clean, and dried slow on raised beds. It comes in tight and quiet, then blooms over a few days: candied apricot and blueberry over dark chocolate, bright but never sharp. Pull it as espresso and it turns, and the citrus steps forward.
