Ethiopia - Sidama Ayla Bombe
This coffee is grown in celebrated coffee growing highlands of Bensa, Sidama Ethiopia then processed at the Ayla Washing Station near the Bonora River and the slopes of Durto Gerbamo Mountain. After harvest, coffee cherries are carefully sorted then undergo a unique 12-hour soaking period which encourages greater sweetness and a distinctive honey-like character. The coffee cherries then undergo a controlled drying period lasting approximately 28 days, which preserves complexity and clarity in the final cup.
