Coffees from the Las Lajas Micromill are beloved by the specialty coffee industry for decades for their leadership in microlot production and coffee processing innovations. Perla Negra is a natural processing method developed by the Chacón’s. The ripe coffee fruit is dried on raised beds for a week under the sun then rested in the shade. After the shade drying period, the beans are transferred to a greenhouse to continue the dehydration while being moved twice a day.
