Ethiopian Habtamu Goro
This is our second coffee from Habtamu Fikadu Aga this year and it's difficult to decide which one we like more. The care this coffee has had is impeccable. The cherries are held with about ten percent mucilage, fermented for 24 hours, hand washed, then dried on raised beds out of direct sun for 9 to 12 days, turned and inspected every few hours by two dedicated quality-control managers who track moisture and pull defects at each pass. In this cup we taste a very bright, crips, citrus grapefruit, followed by a light floral almost Bergamot and a mild spice. Recommended Rest | 10-14 days from
