Macedonia llega de Finca Las Acacias con un perfil que sorprende desde la primera taza. John Edison Vélez Hoyos trabaja esta variedad a 1.800 metros en Guática con un proceso natural de 120 horas : la cereza fermenta entera, sin intervención, y el resultado es un café con cuerpo limpio y notas a piña, durazno y fruta tropical que se expresan con claridad en cualquier método. En filtro, el perfil frutal aparece completo desde el primer sorbo. En cold brew, que es donde Macedonia da lo mejor de sí, las notas se concentran y el dulzor se alarga.
