Roast: Light Roast Character: Apricot, Cocoa, Floral Chito’s farmers primarily grow heirloom varietals, which thrive in the region’s semi-forested, shade-grown environments. Washed (or wet-processed) coffees from Chito are meticulously produced through traditional smallholder methods, where cherries are selectively handpicked, depulped, fermented, washed, and then dried on raised beds. Coffees from Chito often exhibit floral aromatics, rich cocoa, and notes of stone fruit, hallmarks of the best Yirgacheffe profiles.
