Elite Honey is one of the first two we’re releasing from his farm, Finca Elite, this season. Elite Honey is a honey-processed Pacamara, a variety known for its larger bean size, creamy mouthfeel, and natural sweetness. The honey process — drying the bean with its mucilage intact — builds on those qualities with added body and a subtle fruit character, presenting rich, sweet malt, a soft honeydew melon, and a bright flourish of lime zest.
