Some coffees are perfectly happy being one thing. This isn't one of them. From Colombia's Cauca region, this is a coffee we like enough to roast both medium and dark — and it turns out to have a pretty different personality depending on where you take it. At a medium roast, subtle mango brings a little tropical brightness to the cup, balanced by cocoa powder and a panela-like sweetness.
