Honduras Santa Lucia Casona
The cherries are picked ripe, dry-fermented for 36 hours, dried slowly on raised beds under greenhouse shade for up to sixteen days, then rested in parchment for a month before milling. That patience is what you taste. Washed Geishas from Santa Lucia have taken first place at Cup of Excellence Honduras twice, and this lot shows why. In the cup, we taste Jasmine, Nectarine, and Brown Sugar, all carried by a very juicy cup that leaves you wanting more.
