This particular coffee has undergone an anaerobic fermentation process meaning that it has been stored in a tank, prior to drying, devoid of oxygen where a yeast extract has been added allowing the coffee beans to absorb more sugars and compounds from their cherries. This allows the coffee to develop distinctive flavour profiles that are often fruitier, boozier, more complex. This coffee however, still maintains a flavour profile
