Santa Adela - Nicaragua - Light roast
Dit is de meest funky koffie die we tot dus ver hebben mogen branden. Boer Maximino en zijn vrouw Marlene groeien op Santa Adela, een boerderij die drie uur van het dichtst bijzijnde washing station is verwijderd, deze Red Catuai variëteit. Deze varieiteit staat bekend om haar karakteristieke zoetheid. Deze boon is dubbel gefermenteerd in een afgesloten tank, zogenaamd Carbonic Maceration. Dit anaerobe proces vervangt zuurstof door CO2, waardoor de bessen van binnenuit fermenteren en complexe, fruitige smaken ontwikkelen die behouden blijven.
