Peru Chonta
Tasting Notes: Chocolate, Green Apple, Plum, Roasted Almond, Citrus Process: Washed Elevation: 1850-2100 m This coffee comes to us from the Chunchucas river valley in Cajamarca Peru. Before processing these cherries go through a rather long fermination process, which translates to a much more complex cup...often realized as an increase in fruited notes as the coffee cools. I love complex and balanced cups, and this one fits the bill for me...just enough fruit, just enough chocolate, and I discover new flavors as it cools. Enjoy :)
