Javara Moringa Noodle, 200 g
Noodles made with moringa leaf, which is greener and more grassy than spinach. Moringa leaf is worked into the dough. It gives a deeper green than spinach and a slightly savoury, grassy note that stands up to garlic and chilli. How to use it: boil 4 to 5 minutes, drain, then stir-fry with garlic, shallots and chilli. Also good in a clear broth. From Javara, an Indonesian producer working with smallholder farmers to keep heirloom crops in commercial use.
