Milk Chocolate, Pear and Brown Sugar This washed lot comes to us from a group of five farms in Sierra Nevada, Colombia. Grown between 1,212—1,892 MASL on 95 hectares, the coffee is meticulously harvested in batches, and only ripe cherries are selected. Once collected, it undergoes initial processing at the mill, starting with floating the cherries. Then, they rest in a hopper overnight and are depulped the following day before being placed in fermentation tanks. Finally, the coffee is transferred to a silo for a slow, pre-drying before its final drying phase to ensure optimal quality. In the n
