Special Guests’ 2nd Birthday, Hacienda La Esmeralda Trapiche 7FB and 4ANC, Panama
Country of Origin: Panama Variety: Geisha Process: Washed 7FB/Natural 4ANC Altitude: 1600masl For our 2nd birthday at Aybrook Street, we wanted to celebrate with something special: two exceptional geishas from one of the most famous farms in the world, Hacienda La Esmeralda. Both come from their Cañas Verdes farm, from the Trapiche lot. The name comes from the trapiche, a mill traditionally used to process sugar cane into panela (known locally as rapadura) — a nod to Cañas Verdes' history as a sugarcane-growing region. We wanted this birthday box to showcase how much processing alone can shape
