/060 Colombia — Yoiner Mosquera
Yoiner’s /060 A complex and full Colombia Rosado from Yoiner Mosquera in Palestina, Southern Huila. Overripe cherries undergo a 72-hour anoxic resting period in-husk before being dried slowly in a greenhouse for approximately 20 days. Expect sweet apricot jam, orange peel notes, process-forward sweetness and a bright, juicy finish. This was the competition coffee for the first Sibarist × A.M.O.C.
