Finca Idealista

What makes it rare: The whole harvest was under 30 pounds. It sat with an added yeast called Intenso, and no air, for 261 hours. The plant is Pacas, El Salvador's short Bourbon found in 1949 and a parent of Pacamara. Finca Idealista is Gold Mountain's home farm. They clear weeds with machetes, fight bugs with a mushroom, and keep coffee water out of the streams. Pickers get paid double. The yeast, LalCafé Intenso, is made for coffee by Lallemand, a company that also makes yeast for wine and beer.
