Οι καρποί διαχωρίστηκαν με τη μέθοδο της επίπλευσης ώστε να διατηρηθούν μόνο οι πλήρως ώριμοι, υπέστησαν οξείδωση (ως ολόκληροι καρποί) για 18 ώρες σε θερμοκρασία 22-25°C και στη συνέχεια ζύμωσαν αναερόβια σε πλαστικά δοχεία για 40 ώρες στους 16-18°C.
