Ethiopian Light Roast
Top notch (expensive) beans right here! At a light roast this coffee retains all the origin flavors, such as lemon grass and dark chocolate, but also a sour fruity accent from the natural manner of de-pulping. Coffee comes off the tree looking like a cherry and what your roast, grind, and brew is the pit. Instead of soaking in water to quickly remove the outer layers, these beans were lovingly sunbathed for a few days, occasionally turned by hand. The pulp begins to ferment, imparting the unique flavors to the bean. This is graduate level coffee. It doesn't get much more top-shelf than this.
