This release is exceptionally scarce & highly expressive. Finca Deborah only has 250 bourbon trees growiing on the farm, making annual production of this esteemed variety incredibly low. Whole cherries undergo long, extended anaerobic natural fermentation-- sealed in carboinic-style tanks starved of oxygen before slow drying, driving intense flavor development.
