Colombia Jairo Arcila - 75% Coffee Bean-to-Bar
This 75% coffee bean-to-bar was made from a unique microlot produced by Jairo Arcila of Santo Monica in Quindío, Colombia. The beans underwent an anaerobic fermentation with peaches and wine yeast resulting in a coffee that is incredibly aromatic, while delivering a smooth creamy texture. The beans were ground over multiple days before being incorporated with cocoa butter and sugar, so they could be tempered into decadent chocolate bars. When we taste this chocolate, we think of...
