Las Lajas Estate, run by 3rd generation coffee producers Dona Francisca and Oscar Chacon, is located right in the foothills of the Poas volcano in the Central Valley of Costa Rica. Most coffee is processed using either a "dry" or "washed" method. This bean however, goes through a specialized process that is in between the two. A "honey process" keeps the coffee cherry around the seed until the fruit dries to a certain color (white, yellow, red or black), which imbues a little extra sweetness and can modify the body strength and acidity.
