Sitio Pedro Varinhas - Brazil Cup of Excellence - #4 Honey Process
We purchased three coffees from the most recent Cup of Excellence Brazil auction. All three of the coffees feature the Arara variety. Arara is a hybrid of Obata and a Yellow Catuai. The fruit ripens to a yellow color and the seeds are larger than average, the plant has shown resistance to leaf rust diseases and it is known to produce an exceptional quality in Brazil. Perhaps due to the fact that it matures slower than other fruit, giving the seed time to develop complex sugars resulting in fruity to floral flavors in the coffee. 17 of the 30 COE coffees were of the Arara variety and only 4/30
