Vous connaissez Finca Jazmin, le café que Neptaly a nommé en l’honneur de sa fille cadette. Il y a quelques années, notre partenaire a acheté une autre ferme dans les hauteurs de Santa Barbara, avec vue sur le Lago de Yojoa. Cette fois pour sa fille aînée, Dania. C’est une ferme incroyablement escarpée, plantée de Pacas. Chaque année depuis, la qualité n’a cessé de progresser. C’est la deuxième année que nous séparons la récolte de Finca Dania, et elle confirme son potentiel avec 87 points. Une clarté remarquable. Du miel, des fruits tropicaux vifs, tout ce qu’on aime dans les cafés de Santa B
