October subscription release. Another beautiful entry from Jairo Arcila and our friends at Cofinet. No fancy or advanced processing here. Just a good ol’ fashioned natural. Cherries picked at peak ripeness and dried on raised beds. I love the way the natural processing augments the chiroso flavor profile here. The acidity leans slightly tart like ripe pink grapefruit, but is balanced by a deeply sweet orange marmalade character.
