This year’s second special offering from the Villatoro family comes by way of this anaerobic washed lot, dubbed “Aurelio Especial.” The first release featured coffee from Rodin, Aurelio’s son, and this lot follows a similar varietal and processing approach. After an immaculate cherry selection from the highest elevations of the farm at peak ripeness, Aurelio begins fermentation in GrainPro bags, a step that may contribute to the coffee’s boozy tropical character.
