Processing: Sugarcane processed Tasting notes: mixed nuts, dark chocolate, and a hint of toasted wheat. Our current Decaffeinated offering: our Colombia Huila Decaf. Grown by a collection of smallholder farmers in the famed Huila region of Colombia, this coffee has been decaffeinated using the Ethly Acetate method, sometimes called Sugarcane process decaf. By combining Ethyl Alcohol and Acetic Acid (alcohol and vinegar), both derived from fermented sugarcane, we get a mild solvent that gently removes caffeine from the coffee beans before we roast them. This preserves the flavor of the bean
