This washed Pacamara was grown on a restored 1870s estate almost lost to war. The Duarte-Chacón farm unites two neighboring parcels on the volcanic Apaneca-Ilamatepec range. In this lot, Pacamara, one of El Salvador’s prized contributions to the coffee world, is processed with a 48-hour waterless tank fermentation. We taste notes of molasses, tangerine, and ginger.
