This is another Pink Bourbon variety, which has become very popular since winning the Cup of Excellence in Colombia in 2022. Pink Bourbon is a taller variety with a pink ripe fruit, hence the name. This coffee uses an experimental oxidación process in which coffee undergoes a 48 hour fermentation, using temperature and oxygen levels to control the fermentation process.
