Sasaba comes from the highlands of Guji, Ethiopia, where smallholder farmers grow coffee at approximately 2,000–2,150 meters above sea level. The harvested cherries are delivered to the Sasaba processing station in the Kercha district. We selected this coffee for its expressive fruit character and spent considerable time developing a roast that preserves its natural brightness while building sweetne
