Orange zest and bergamot on the nose, black tea through the body, and a floral honey sweetness that lingers. Idido is a small community a few kilometers outside the town of Yirga Chefe, in Ethiopia's Gedeo zone, at around 1,950 meters. Hundreds of smallholder farmers deliver cherry from their garden plots to the local washing station — Ethiopian heirloom varieties, many never formally catalogued, growing in the place Arabica coffee calls home.
