Sacks of green coffee are exposed to the moist sea air for a few months before monsoon season. When the rains begin to fall, the bags of coffee are emptied onto a covered patio, where they are periodically raked and turned throughout the rainy season. The unique aging process mellows the beans, turns them a golden tan, and they develop heavy oak, cedar and leather tones with pronounced nutty, chocolatey and earthy flavors.
