Cold Brew - Ethiopia Kello Danche #1
Un sirop dulce, care creează poftă și pentru care am concentrat rețeta în câteva rânduri: extracție cu apă rece, realizată cu ajutorul Hard Tank. În profilul aromatic urmărim să păstrăm specificul originii; pentru aceasta extracție am folosit Ethiopia Kelloo Danche #1 - ananas, caprifoi, portocală. Claritatea este principalul indicator calitativ culoarea indică gradul de extracție: clară, omogenă diluția controlează gustul: la servire, recomandăm folosirea unui cub de gheață în pahar, pentru a păstra temperatura prin prepararea la rece, aciditatea dispare și suntem foarte atenți ca prin rețe
