Washed Processed • Cherries were harvested and pulped before a 16-18 hour wet-aerobic fermentation. The seeds were then washed, skin dried, and later sun dried on raised mesh beds. Bourbon • A high quality specialty variety first widely cultivated in the 1700s known for its natural sweetness.
