Mexico Chiapas
Grown high in the Sierra Madre mountains of Chiapas, this coffee comes from smallholder farms sitting between 1,200 and 1,750 meters above sea level. Fertile volcanic soil, steady rainfall, and dense forest canopy help produce the balanced sweetness the region is known for. Its proximity to Guatemala’s Huehuetenango shows in the cup, with a familiar combination of chocolate richness, soft fruit, and gentle acidity. Using the traditional washed process, ripe cherries are pulped, fermented, washed, and carefully dried to preserve clarity and balance. Expect notes of milk chocolate, roasted almon
Merchant's tasting notes: milk chocolate, roasted almond, dried fruit, citrus
