Guji Hadeso - Ethiopia
Hadeso is a remote woreda in Ethiopia's Guji region. This our third year sourcing coffees from this exception growing region, where like Yirgacheffe, smallholder farms hand pick heirloom varietals (landraces) at peek ripeness and cart them, often via motorcycle, mule, or on foot, to local washing stations for processing. Harvest coincides with monsoon season in Hadeso and heat, humidity, and water logged roads complicate the collection and transportation of coffee to the washing station. Once there, cherries are pulped and fermented in concrete tanks for 36 to 48hrs before the drying process.
