Cenicafé 1 y Supremo con proceso honey de doble fermentación. Notas a mandarina, naranja dulce y uva blanca sobre un cuerpo cremoso. John Edison Vélez Hoyos cultiva las dos variedades en Finca Las Acacias, a 1.800 metros en Guática. Cenicafé 1 la desarrolló el Centro Nacional de Investigaciones de Café de Colombia para el Eje Cafetero, como variedad resistente y productiva. La cereza entera fermenta 30 horas en anaerobia antes del despulpado. Después, el grano pasa otras 20 horas en tanque conservando el mucílago, la capa azucarada que lo envuelve, que sigue pegada al grano durante el secado y
