The care is methodical: cherries are held with about ten percent mucilage, fermented for 24 hours, handwashed, then dried on raised beds out of direct sun for 9 to 12 days, turned and inspected every few hours by two dedicated quality-control managers who track moisture and pull defects at each pass.
