Warm wet summers, dry winters, farms sitting between 800 and 1,200 metres. Cherries ripen evenly there, and evenly is what you want. We buy Yellow Catuaí, dried whole in the sun so the fruit sugars stay in the bean, and roast it here in Gdańsk. What comes out is what Brazilians actually drink at home: chocolate and toasted nuts, heavy body, almost no acidity, sweet enough
