Colombia Caturra Black Honey Experimental

A Golden Bean Silver medalist and 94-point coffee, "Purple Haze" is a rare experimental Caturra grown at Pedronel Ospina's Finca Sicilia in Quindío, Colombia, processed at Edwin Noreña's Campo Hermoso lab. Most black honeys go straight from pulper to drying bed. This one took a detour. After carbonic maceration, the juice the cherries released, called mosto, was cultured with yeast and rose apple. The cherries were pulped to black honey, skin off and mucilage intact, then dosed back with mosto. Ten days of greenhouse sun-drying locked it all in. Grape soda sweetness, rose water lift, dark blac
