El clima templado y los suelos fértiles de la región favorecen una maduración lenta y uniforme de las cerezas, con cosecha manual entre noviembre y marzo seleccionando únicamente frutos en su punto óptimo de madurez. El proceso lavado de preparación europea con secado controlado hasta 11% de humedad garantiza limpieza y precisión en el perfil final.
