가차타 웨트 밀(Wet mill, 수리 가공 공장)에서 생산된 이 케냐 커피는 블랙커런트, 블랙베리, 건포도의 강렬한 과일 향미를 품고 있습니다. Tim's Notes 저는 니에리(Nyeri) 지역에 위치한 가차타 웨트 밀을 여러 번 방문했습니다. 이곳은 니에리의 여느 가공 공장들과 외관상 비슷해 보이지만, 오랜 세월 동안 이 지역에서 최고의 고품질 커피를 생산하는 곳 중 하나임을 증명해 왔습니다. 적어도 제 생각은 그렇습니다. 웨트 밀의 주된 역할은 소속 조합원들과 농부들이 수확해 온 커피를 가공하고 건조하는 것이지만, 매년 일관되게 훌륭한 품질의 커피를 생산하기 위해서는 이처럼 잘 운영되는 가공 공장의 존재가 필수적입니다. 가차타 협동조합은 커피를 훌륭하게 가공하고 건조할 뿐만 아니라, 농부들에게 광범위한 교육을 제공하고 있습니다. 심지어 가공 공장 내에 작은 시범 경작지(demonstration plot)를 마련해 두고, 조합원들에게 올바른 농업 관행에 대한 교육을 진행하기도 합니다. 또한 협동조합 차원에서 커피나무와 그늘나무(shade trees)의 묘목을 직접 길러 조합원들에게 보급하고 있습니다. 대부분의 조합원들은 여전히 전통적인 품종인 SL28과
