에티오피아 게데브의 단체 워싱 스테이션에서 애너로빅 발효 후 워시드로 마무리한 커피입니다. 들꽃 같은 화사한 향이 먼저 열리고, 복숭아 아이스티의 부드러운 단맛이 중심을 잡으며, 홍차의 여운이 길게 남습니다. 꽃향과 차 느낌이 앞서는 가볍고 깨끗한 컵입니다. 가공 방식이 독특합니다. 잘 익은 체리만 손으로 골라 선별·부유 세척한 뒤 펄프를 벗겨내고, 밀폐 탱크에서 산소 없이 48시간 발효시킵니다. 발효를 마친 파치먼트는 깨끗한 물로 두 번 씻어낸 다음 건조대에서 15~20일간 말립니다. 밀폐 발효가 복합적인 향을 만들고, 이어지는 워시드 공정이 컵을 깨끗하고 가볍게 정리합니다.
