Guatemala Cuevitas
Cuevitas is another beautiful lot of coffee from perennial producing partners, the Vides family. From the Huehuetenango Department in the west of Guatemala, they have sent us ten bags off their farm that includes both Caturra and San Ramon varietals. While the individual seeds are small, the flavor and dynamics are strong with this one. After harvest, the cherries undergo a 36 hour fermentation and then are sorted, depulped and then spend 15 hours in a dry fermentation tank before a final washing.
