Recibe cerezas de cientos de pequeños caficultores que cultivan principalmente SL28 y SL34 alrededor de 1.700 metros, sobre suelos volcánicos que favorecen perfiles intensos y complejos. EL PROCESO Las cerezas maduras se seleccionan, despulpan, fermentan para retirar el mucílago, se lavan y se secan lentamente.
