Ember Coffee Co. · United States
Gunflint Trail
Legitimate medium dark roast (into second crack, oils surfacing) using Indian washed coffee's unique spice character. S-795 and Selection 9 are Arabica-Liberica hybrids bred for India's conditions, they possess robustness that handles extreme development without collapsing or tipping. Washed processing creates clean darkness: chocolate and spice without muddiness. Cardamom and clove notes intensify with roast rather than disappearing. This is intentional darkness, craft quality with bold character.
