Our second release from Ratnagiri! This lot comes from a century-old South Indian estate that's becoming noted within the specialty scene. Founded in the 1920's, Ratnagiri is run by third-generation family owner Ashok Patre.Versed in experimental processing methods, Ashok began producing sealed anaerobic fermentation lots using stainless steel tanks in 2019. Since then, he has experimented with the many ways anaerobic processing can take place. This lot is no exception to that trend. Cherries are fermented in a biofermenter for 48 hours with LalCafé Intenso microbes. They are then vacuum-shock
