Cerro San Luis Micromill is a family-run farm and mill in Grecia, Costa Rica, owned by siblings Alexander and Magali Delgado and their spouses. About four years ago they replanted with 10+ varieties—including Caturra, Bourbon, SL-28, Catuai, Villa Sarchi, and Maragogype—to boost quality. Cherry is harvested from their adjacent, separately named plots and brought to the family mill, where it's processed as washed, honey, or natural, with the honey type determined by how much mucilage remains after depulping. This particular offering came from the Espiritu San Luis plot.
