This is due to reduced CO2 density in the atmosphere, as well as cooler tempertures. This slower growth promoties the development of more complex sugars and acids in the bean. With an average growing altitude of between 1400 – 2200masl, Ethiopian coffees offer a wide variety of complex flavour profiles. They are often floral, fruity & sweet in character.
