The Coffee Roaster · United States
Nicaragua - Brix Breaker - Pacamara
Gold Mountain's ripeness team walks their member farms with refractometers, the same tool wine grape growers use, measuring the sugar in the cherries before anything gets picked. Pacamara cherries already run sweet. Picked at their absolute peak and then dried whole in the sun, they go somewhere else entirely. This is the lot that earns Gold Mountain its reputation, and it drinks more like a fruit concentrate than a cup of coffee. Ripe papaya in the aroma, dark blackberry through the middle, and a crisp apple snap on the finish that keeps the whole thing from going syrupy.
